In our kitchen Nature commands, and Tradition is her ally.
Our dishes belong to the traditional gastronomy of the Dolomites, influenced by the typical dishes of Cortina d’Ampezzo and Cadore, with close ties to our region, from which we draw inspiration and raw materials.
We utilize exclusively products that are in season, where possible with zero food miles.
This means that our menu is constantly changing, the combinations of dishes and their accompaniments varying according to the time of year and the availability of the ingredients, with side dish ingredients, cheeses and meats sourced from local dairies and farms.
The desserts and the pasta are all home made. For those with special needs, we prepare vegan, vegetarian and gluten-free dishes.
But all this would be incomplete without wine. Aldo himself sees to the selection of the wide range of labels from all areas of Italy.
