The “seasonal classics” and variations on the theme

In our kitchen Nature commands, and Tradition is her ally.

Our dishes belong to the traditional gastronomy of the Dolomites, influenced by the typical dishes of Cortina d’Ampezzo and Cadore, with close ties to our region, from which we draw inspiration and raw materials.

We utilize exclusively products that are in season, where possible with zero food miles.

This means that our menu is constantly changing, the combinations of dishes and their accompaniments varying according to the time of year and the availability of the ingredients, with side dish ingredients, cheeses and meats sourced from local dairies and farms.

The desserts and the pasta are all home made. For those with special needs, we prepare vegan, vegetarian and gluten-free dishes.

But all this would be incomplete without wine. Aldo himself sees to the selection of the wide range of labels from all areas of Italy.

Venison carpaccio marinaded in herbs with crispy cooked vegetables and polenta wafer
A selection of cheeses from local alpine huts accompanied by various mostarde
A mushroom millefeuille with a fondue of Taleggio cheese and walnuts
Steak Tartare with quail’s eggs and caramelised cherry tomatoes
Paccheri di Gragnano (a handcrafted pasta from Naples) with Veneto sausage, Pecorino cheese and black pepper
Duck tortelli served with a citrus fruit sauce and sage
Risotto with cauliflower, speck and dried black olives
Barbecued lamb ribs “allo scottadito” served with a mustard and honey sauce and roast fennel and potatoes
Braised pork cheek with local Storo polenta, celery and carrots
Fillet of venison with a bilberry sauce, grilled radicchio and grilled celeriac
Pears cooked in red wine with crumble and crema al Mascarpone
Bilberry semifreddo with pancakes and maple syrup
